  1. The night started as any other night at Fertelli's Pizzeria. Papa Dang would start out by making the dough for the pizza.

    Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.

    Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

    Then, he would make the homemade secret tomato sauce from scratch. Now, Papa kept this recipe under lock and key in the wall safe behind the desk in his office. If this recipe were to somehow be stolen and released to the public, it would ruin Fertelli's Pizzeria, and Papa Dang would be burned at the stake for allowing such transgressions to occur.

    Jesper clocked in at 2:57 PM, since he was a good, punctual boy. He was placed on the delivery route tonight, but with no car or license, he was forced to bike around delivering pizzas. On a normal Fertelli night, Papa Dang would crank out 45 pizzas per hour, and they would usually sell 600 pizzas during Jesper's shift. So, 10:30 PM rolls around, and the guy manning the register, Billy the Boy, received a phone call for a pizza delivery. The order seemed normal enough, two large pizza pies. One was a pepperoni and sausage pizza with extra cheese. The other pizza was slightly more odd, though. They asked for a pizza with olives, bell peppers, lamb, and a whole head of lettuce shredded on top. Now, Papa Dang wasn't one to judge pizza orders, since everyone has their preferences, but this was just an odd combination for a pizza. Well, Dang cranks these two pizzas out in 8 minutes, which gives Jesper 22 minutes to deliver these pizzas. The problem is, Jesper has to make it across the entire town, which usually takes 17 minutes by car, and he only has a bicycle. And if these pizzas aren't delivered in 30 minutes or less, the consequences are extremely dire for Jesper. Come back for Part 3, when we follow Jesper on his travels.

    Who has a delivery area that large and allows someone to deliver on bike? And what manager would dispatch a delivery across town to someone on a bike? Do they have no other delivery drivers? And no pizza place does the 30 min or it's free policy anymore since that's a liability when the driver gets into a wreck because he was speeding. And don't even get me started on how undercooked that pizza is gonna be, unless the oven is set at a super high temperature, which would cause its own problems
